Roast Organic Chicken, local goat's cheese

 was drinking very well indeed. 

 ASK the butcher to butterfly a chicken for you. Make sure it is free range at least, if not organic. they may not remove the kidneys or liver, so do that when you begin.
Combine finely chopped garlic, coriander stem, caraway seeds and red chilli with some dehydrated black olive. (place pitted olives in a dehydrator or in a pilot oven overnight - or on top of a coffee machine for a couple of days. Crush with extra virgin olive oil in a mortar and pestle. Rub the baby down. Place it skin side up in a high oven (200 degrees) for 10 minutes, then drop the temp to 160 degrees for 1.5 hrs.
 

 allow to rest on a clean board.




 arrange some fresh garden leaves on a platter.


 the dressing is equal parts white vinegar, honey, olive oil - in a glass jar, shaken.  add Meredith goats cheese or similar, optionally roast beetroot, and dress. allow the bird to cool right down to warm, as it will wilt the leaves if too hot.

 cut the bird into eighths, squeeze a lime all over the bird. season with pepper, no salt -as the cheese will provide this.


 arrange, serve just above room temp.
