Spring Racing finger sandwiches. BOOOYA !

THIS is a great Spring Carnival recipe. The sandwiches have a fantastic texture and taste. the are light, but most people feel the need to smash like a dozen points each (at least) so make many if you attempt this recipe. To make sandwiches for six, you will need three organic chicken breasts. ask the butcher to vac-pac them. Place the bag in a pot of hot water and bring to the boil. Cook for 15 minutes.  Then allow to cool still in the bag. Refrigerate the bag. You will need to do this prior, maybe even night before. 
 start with some washed celery, split it lengthways into thirds. then dice it.
 add diced granny smith apple (peeled) and some good mayonnaise. I was asked recently if the Japanese Cupie Mayo would be ok for this. I think that is too rich for this recipe. a good home made one, or whole egg commercial one is fine. Finely chop the chicken and add. Remember to keep adding mayonnaise over the apple so it doesn't brown. zest 5 lemons, no pith.
add a bunch of finely chopped chives, sea salt an plenty of fresh cracked black pepper. 

 you can store again at this point if you want to. 

use a Brumby's or Baker's Delight White bread fresh that day, sliced on "sandwich' they do a good job of this particular loaf!!! crusts off, into quaters. You don't need too much filling per sandwich. Use a long sharp knife to cut the sandwiches, not a bread knife.You will get a nice 'rising pancake' effect on the side. do you know what i mean? 


the guests were all fairly sure that was one of the best they can remember.
