seared local scallops, melons, sourdough

DO you need an ingredients list, I dont think so. Just extract ingredients from the method. If I wasn't so washed up I would probably write an ingredients list. Nevertheless, this is a fantastic entree, or even a salad to share. here goes first recipe. Peace. RIP bad food.
1. dice watermelon, green and honeydew melon into large (ish) cubes - seeds not so good. place into vac pac bags and "compress", one bag for green, one for red, one for yellow. then put into freezer until frozen, then defrost. this gives the melon an amazing intesity.  
2. blitz sourdough until course and pan fry on low with a couple of fat strips from bacon or Jamon. set aside
3. pan fry (hot) some local scallops - no matter how small, roe on or off - but de-nuded (cut tough white bit).  dont overcook the babies, get them out of the pan asap and onto a clean surface (blank plate).
4. arrange on a plate, zest a lemon over with a microplane zester, and garnish with either small lemon verbeena leaves, or ribbons of mint. boom.
