an Aussie option for leftover roast beef....meat pies

simple roast
is this OK to serve to a vegetarian? only kidding, but seriously honey carrots, how good.




THE NEXT day or so.

make  a quick vegetable stock with the scraps of onion, the stems of half adozen field mushrooms, some garlic and the leftover roast carrot.

chop some onion and dice the flesh of those mushrooms.

at this point, slice the remaining cold beef.

dice, some thick, some rough and fine. and some finely chopped parsley.

strain the stock and add the mushrooms on a high heat - reduce. Add the three musketeers of Aussie cookery (just a little of each!!)

when it is perfect pie filling consistency, add some fresh raw peas and the beef and parsley and take off the heat.
spoon hot into bowls.


cover with butter puff. Do you want a good puff recipe? glaze with a little free range yolk.
15 min or so on 190. serve with roast pupkin drizzled with honey to bring back fond memoirs of the Cerotene/Honey combo.
