dry aged rib eye

a few lads over for a steak, good bordaux, and a few laughs. We drank a 1992 Cos D'estoural, and began with this, Ferran Adria's taylor- made Estrella, called INEDIT, a sweet, floral beer, with an amazing bead and balance. stricly to be served in a Chardnonnay glass or similar, see http://www.youtube.com/watch?v=9XlWlxs58kA . Crackin drink.
I went to the best butcher of all time, (big call) Henry Penny's in Newtown, for some good dry aged rib eye.

took some good starchy potatoes, and made a potato, chive, and garlic mash

home made WShire sauce. Beef was delicious, spongy, tender, perferctly fatty, shamone.
